
Apple Topped Chops
We’re always in search of something delicious and “restaurant” worthy for dinner. I tried this recipe from Taste of Home Low Fat Country Cooking, and was extremely pleased with its yummy factor. The fragrant smell enveloped my home. Comfort food all the way, with a lo cal twist.
This photo was taken of the picture in the cookbook, so due credit is given. Anybody who knows me is fully aware that cooking is not my forte!
Here’s the recipe:
6 loin pork chops (3/4 in thick) 1 cup apple juice
1 med. onion thinly sliced 1 Tbs. brown sugar
1/2 cup raisins ( I omitted this) 1/2 tsp. dried basil
3 med. apples, cut into 1/2 in. slices 1/4 tsp. nutmeg
1/8 tsp. ground cloves
In a large skillet coated with nonstick cooking spray, brown pork chops over medium heat. Place in an ungreased 3 qt. baking dish. Place onion rings over the chops. Sprinkle with 2/3 of the raisins. Arrange the apple slices on top and sprinkle with remaining raisins. Combine apple juice, brown sugar, basil, nutmeg and cloves; pour over all. Cover and bake at 350 for 1 hour. Uncover and bake 30 minutes longer or until meat is tender. Yield: 6 servings
I didn’t cook mine the entire extra 30 minutes. Instead, I used my meat thermometer to check if they were done.

birthday surprise
When I got this unassuming denim looking wrapping paper, I thought it would be good for the men in my life. What a nice surprise it was to see the bandanna print on the other side. Sometimes you just don’t know what wonderful surprise is around the corner. I hope he likes this.
Well another February has rolled around and I finally have begun the sweater project I’ve been longing for. This is the February Lady Sweater knit with Brown Sheep’s Cotton Fleece. I’ve knit two baby versions of this sweater without much problem, but this “grown ass” (pattern author’s own words) size is giving me quite a challenge.
I’ve sent this to the frog pond (rip it, rip it … ) on numerous occasions. You can see the kinked yarn in this photo because it’s been torn out too many times. My solution – thanks to the kind fellow knitters on Ravelry – is to place stitch markers every 7 stitches (gull lace pattern repeat). Some of these little gems are visible. Hopefully I’ll be able to cruise along and only fix mistakes easily located in the error section. My goal is to finish this by the end of this month. My regular job definitely is interferring with my goal setting. Wish me luck!

What a beautiful sight to wake up to on Valentine’s morning. This view is right outside my window. I’ll never grow tired of the every changing mood of the mountains. It was so lovely today that we went on a mountain picnic and hike. The serenity of this winter wonderland is so soothing. The steep snowy roads weren’t so relaxing however! At least there weren’t very many people out on the roads. I heart my family and the mountains!
