Do you remember last weekend when I said that I was going to go home after my winter walk, and do chores and take care of other boring business stuff?  Well … I immediately went home and started making the cranberry orange scones I’ve been thinking about since the holidays.  These are actually the first scones I’ve ever made.

They were easy to make, and tasted scrumptious right out of the oven with a steamy cup of good coffee.  I miss all my old, (as in frequent) baking habits.  Eating healthy just isn’t as much fun.  That’s for sure!

Birthday Celebration #3

Because of the snowstorm last weekend, we postponed our son’s birthday dinner celebration until tonight.  It’s a tradition for him to choose bd’s Mongolian Grill.  The wait time for dinner was about two hours, but it was worth it.   This place is alot of fun.  You choose your “raw” foods, create your own sauce, and the grillers ham it up and grill it before your eyes.  These guys were good sports in posing for my photo.  I hope my son enjoyed this celebration.

Too much food!

Since we had quite a bit of time to occupy, we took a long walk on the 16th Street Mall.  Although we hopped on the mall shuttle bus for a few blocks, this mode of travel looked much more desirable.  Yee Haw!

Several days ago … before our 3 day snow storm, we went for a walk in the country.  This is one of my favorite places to visit in February because the cows are calving at this time, and I love calves!  This is a true sign of the upcoming spring.  We had to walk between many sets of mamas and their newborn calves (not such a great idea), to continue logging in the mileage.  This cow made it clear that we were to stay away from her cute little baby, who was no more than a day old.

Only baby cows can get me to walk on a cow paddy riddled trail (see “things I’m not so fond of ” in the “About”  section).  I wish I could give a baby cow a nice big hug … but that isn’t about to happen anytime soon.  Did you not notice that mama?

Winter Bridge

It’s hard to get up early on a Saturday morning and know you should be exercising,  while all you’re thinking about is brewing a pot of aromatic coffee and baking some cranberry scones to go along with it.

I never regret going on a walk, once I’m actually doing it.  Today was so peaceful and white.  We only saw two other people,  which made it seem that we were all alone in this beauty.

Now I’m back home and need to face some chores, bookkeeping, and other yucky business (insurance claim dispute), and then … I’ll get to make the cranberry scones I’ve been dreaming about since Christmas.
